The excavations of parkings in the centre of Lyon (Rhône, France) allowed the study of mammalian bone remains from the Ist century A.C. to the XIXth century. The fluctuations of the number of identified specimens (NRD) of pigs, sheep and goats, and cattle show similar trends to those observed in other French cities. They reflect preferences in the diet; but they must be studied with the idea that a city is organised: bones and meat do not follow the same ways.
