The meat market in Denmark: likes and dislikes concerning animal species
The list of animal species eaten today in urban Denmark shows a very restricted range, as does the limited type of cuts consumed. Food preferences appear to be determined by the degree of domestication of the animal. Traditional meat-eating habitats have been abandoned, and following on from this, people have have adopted new eating norms. The Danish diet is distinguished above all by a standard preference for pork.
