The study of animal bones found in waste deposits on various sites has enabled the regrouping of data on breeding during the Roman period within the areas of Quercy, Causses and the Pyrénées. It has been possible to identify the existence of differences between cattle and sheep/goat from site to site. These findings, together with the questions they raise, will permit further investigation of subjects such as breeding and meat supply to the urban centres of the region.
